I had a pretty clear idea what I wanted from these, the moment I decided to make them. For Kane, it had to be roses and chocolate, but it was pretty hard to find a recipe I liked.
The first attempt came out kind of dense and oddly cracked and hollow, which... may be character appropriate, but doesn't make for very nice cupcakes. Apparently, I used too much butter. (The last two pictures are from that first batch, because they did look pretty cool)
The second batch came out perfect and fluffy.
Ingredients:
- 60gr butter
- 60gr chocolate
- 130gr suggar
- 3 tbsp rosewater
- 2 tsp cocoa
- 2 tbsp hot water
- 2 eggs
- 150 gr flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 100 gr sourcream
- Preheat oven (Gas Mark 4/180° C/350 F).
- Melt the butter, chocolate and sugar together and then let cool for a bit.
- Pour this mix into a bowl and beat it until creamy.
- Add in the eggs, one at a time.
- Dissolve the cocoa in the hot water and add it and the rosewater to the mix.
- Mix in the baking powder, baking soda, salt and half the flour
- Add the sourcream.
- Mix in the rest of the flour.
- Spoon the batter into the muffin tray and bake for 20min.
- Let them cool in the tray for 1-2min after you take them out and then let them cool completely.
Glazing
- 2 tbsp cocoa
- 6 tbsp sugar
- 3 tbsp water
- ¼ tsp vinegar
- mix everything in a small pot
- let it simmer and boil a couple of times
- spread over cupcakes before it hardens
I would like to note that, before they were done baking, my power went out, so I had to decorate them by the light of an LED disco lamp.
